Scallion pancakes Serves 6 2 cups flour 1 tablespoon cornstarch 1 teaspoon salt 1 cup boiling water Extra flour (for sprinkling) 10 tablespoons canola oil 2 bunches scallions, finely chopped Salt and pepper, to taste 2 tablespoons sesame oil 1. Have on hand a rimmed baking sheet fitted with a metal rack. 2. In a food processor, combine flour, cornstarch, and salt. With the machine running, slowly add the water. Mix dough for 1 to 2 minutes until it forms a ball.
