Serves 4 1/2  cup mayonnaise  3  tablespoons bottled cocktail sauce or hot ketchup  8  large slices rye bread  16  thin slices cooked corned beef  16  slices Swiss cheese  1  cup sauerkraut, well drained  4  tablespoons canola oil, or more if necessary  1. In a bowl, stir together the mayonnaise and cocktail sauce or ketchup. 2. Lay the bread on the counter. Spread all the slices with the mayonnaise mixture.

Makes 8 8 slices thin, dense rye or pumpernickel bread 8 teaspoons unsalted butter, preferably Danish, softened 8 teaspoons grainymustard 16 very thin slices salami 1/3 cup pickled onion slices, made with red onion (recipe below) Cut bread into 2 3/4-inch squares; discard scraps. Spread each piece of bread with 1 teaspoon butter and 1 teaspoon mustard.

Nearly everyone in Hadley makes a version of asparagus on toast. Some make open-face sandwiches with butter, others drench the grass with hollandaise. This closed sandwich uses bacon and mayonnaise. 1 pound asparagus, snapped (see boiled asparagus recipe, above) Salt and pepper, to taste 4 tablespoons mayonnaise, or to taste 8 slices white bread, toasted 16 pieces bacon, rendered until crisp 1. Cut the stalks into 2-inch pieces. Cook them according to the boiled asparagus recipe.

Serves 4 3 cups cooked pork, shredded with your hands 4 long or round soft, eggy rolls 2 cups cabbage salad 1. In a small saucepan over medium-low heat, heat the pork with just the liquid that clings to it. If the pan seems dry, add a spoonful or two of water. 2. Cut open the rolls. Divide the pork among the bottom of each roll. Add cabbage salad and cover with the tops.

A Michigan teen finishing off an Arby's roast beef sandwich chomped down on something tough that tasted like rubber, so he spit it out. Turns out it tasted like finger. The fleshy, severed pad of an unfortunate employee's finger, apparently. Ryan Hart, 14, told the Jackson Citizen Patriot on Wednesday that once he got a good look at it, he knew right away what had been in the junior roast beef sandwich he was eating last Friday. "I was like, 'That (has) to be a finger,"' Hart said.

When D.J. Lawton was a kid he regularly devoured roast beef sandwiches from Mur-Mac's in Stoughton. The restaurant closed, but the succulent beef on a buttered toasted bun is seared in his memory. Lawton, now 25, graduated from Boston University a few years ago and wanted to run his own business. Last year he opened Roast Beast, a tiny spot in the basement of an Allston apartment building, where a sign with an adorable cow greets you, and sandwiches are fashioned after those from his once-favorite eatery.

Taste is fickle, and like a schoolgirl who falls in love with one boy after another, its affections are boundless. Not only that, but our taste buds aren’t prejudiced and can thrill equally over a top chef’s expensive dish, a simple soup, or that American mainstay, the sandwich. Which explains how I found myself eating two sandwiches at once last week, and raving, between bites, that they were the most delicious things I’d ever had. We were at Circe’s Grotto in Scituate, and the sandwiches in question were the portobello mushroom, roasted red pepper, and chevre on grilled flatbread ($7)

A 32-year-old Sandwich man was killed when his car rolled over into a guardrail on Route 6 in Bourne just after midnight. Nathan Moore was driving east at 12:05 a.m. today when his 2001 Toyota 4Runner rolled over into the median side guard rail on Route 6 just past Exit 1, State Police said. Moore was extricated from the car by the Bourne Fire Department. He was pronounced dead at the scene. State Police are investigating the crash. No further information was immediately available.
