Fish sauce, a staple in Thai cuisine, adds a bit of sweet, sour, spicy, and sometimes a welcome bitter taste to food, as it does in this peanut-shrimp dish. The sauce, called nam pla and made from fermented fish, does have a pungent smell that can ward off wary tasters. But don't let that bad rap interfere with this Thai-inspired supper, in which the plump, pink seafood is cooked in a peanut sauce flavored with sriracha and coconut milk, and served on a bed of rice. Use half the shrimp for pad Thai.

ANCHORAGE - An Alaska woman was convicted yesterday of misdemeanor child abuse after squirting hot sauce into the mouth of her adopted Russian son as punishment in what prosecutors said was a ploy to get on the "Dr. Phil" TV show. Prosecutors also said defendant Jessica Beagley, 36, of Anchorage made the 7-year-old boy stand in a cold shower when he misbehaved. Both actions were recorded on videotape. Neither Beagley nor her husband, Gary Beagley, an Anchorage police officer, showed any emotion when the seven-person jury announced its decision.

At the Elote Cafe in Sedona, Ariz., chef-owner Jeff Smedstad roasts corn in the husks over a hot fire. “What could bring to life the flavor of Mexico more than corn roasting and caramelizing over a grill?’’ he says. “For that matter, these flavors would be at home in any backyard where there is barbecue going on.’’ He says that typically in Mexico this dish is made with starchier corn, but he prefers the flavor of the sweet Silver Queen, and admits the mixture always tastes better in the summer.

MUCH AS I LOVE GRITS when they're fresh out of the pot, leftover grits may be even better. When hot grits cool, they become firm enough to slice, and frying the slices adds a golden crust. Fried grits are great plain, with syrup or hot sauce or marinara, with cheese melted on one side as the second side cooks, or as a starchy accompaniment to stews and braises. The technicalities: Pour the leftover grits into an oiled loaf pan or a bowl, cover, and leave in the refrigerator to set. I cut slices about ½ to ¾ inch thick and fry them in butter (for flavor and browning)

Writing "hot sauce" may have landed one man in hot water after police saw him walking out of a tunnel on MBTA tracks along Huntington Avenue early Sunday morning. The man had black and white paint on his hands and told police that he "wrote one thing" in the tunnel, according to police. Alex Wan, 23, of Boston, was arrested for malicious defacing of property and standing, walking, or riding a vehicle on railroad property. In his backpack, Wan had four aerosol cans of spray paint, three paint markers, two permanent markers, and three bottles of shoe polish, Transit Police said.

THE PROBLEM with hazing — one of the many problems with hazing — is that it feels like something that happens to somebody else. It's easy to sneer at the Boston University students who were found shivering and sniffling off-campus last week: stripped to their underwear, tied to each other, with welts on their backs and hair shaved from their heads, covered in honey and hot sauce. These were college students. College students drink too much. College students have an impressive capacity to be stupid.

Police sought criminal complaints Tuesday against 14 suspects accused of beating and binding five Boston University students and then covering them in hot sauce and honey as part of a fraternity hazing scheme. Investigators are seeking to charge the suspects - most, if not all, of whom are BU students - with hazing, assault and battery, and failure to report hazing. The complaints were the latest in a series of recent scandals at the school, including two high-profile accusations of sexual assault.
