Makes enough to fill 20 wrappers

1  package (10 ounces) frozen edamame, rinsed under cold water until thawed 

 Pinch of sugar 

1  tablespoon warm water 

1  tablespoon canola oil 

 Handful fresh mint leaves 

 Salt, to taste 

1. In a food processor, combine the edamame, sugar, water, oil, mint, and salt. Pulse the mixture, adding more water and oil, if you like, to make a puree with some texture.

2. Use the edamame mixture to fill dumpling wrappers, following the instructions above for the pork-filled pot stickers, and steaming or frying as directed.
