As daylight hours dwindle, so does the supply of local tomatoes. Olde Nourse Farm is offering a taste of summer for your pantry. The farm’s Heirloom Tomato Sauce ($8 for 30 ounces), a beautiful deep burgundy mixture, tastes so rich you may suspect it’s been reduced with red wine. “It’s just a blend of heirloom tomatoes — whatever is ripe and tastes good,’’ says Jonathan Nourse, who makes 13 gallons at a time. “We don’t do anything special other than take the tomatoes’ seeds out and skin off and let them simmer for hours and hours.’’ The sauce may include Striped Roman, San Marzano Plum, Brandywine, and (Nourse’s new favorite) Red Pear tomatoes. Basil is the only other ingredient. The flavor bears no resemblance to supermarket sauces. “That’s what keeps us little guys in business: Something that’s really tasty,’’ says the grower.
