Mostarda

Makes about 1 1/2 cups

Mostarda is an Italian condiment, something like a chutney, that is typically served with meat. Fresh and dried fruits are simmered with vinegar and seasoned with mustard for a little kick.

1 Bosc pear, peeled, cored, and thickly sliced 1/2 packed cup dried apricots, chopped 1 cup dried cherries or cranberries 1/4 cup Dijon mustard 1 tablespoon mustard seeds 1/4 cup red wine vinegar 1 1/4 cups water 1.

In a large saucepan, combine the pear, apricots, cherries or cranberries, mustard, mustard seeds, vinegar, and water. Bring to a boil, lower the heat to medium, and simmer gently for 15 minutes or until the fruits are soft and the liquid is absorbed; leave to cool slightly.

2. In a food processor, pulse the mixture until it forms a slightly chunky puree. Serve at room temperature. Adapted from Catch restaurant
