Mango-red pepper salsa

This salsa is also excellent with peaches or apples instead of mango.

1 red bell pepper, cut into 1/4-inch cubes1 ripe mango, peeled and cut into 1/4-inch cubes1 small onion, finely choppedJuice of 1 lime 1/2 cup lightly packed fresh cilantro leaves, chopped1 tablespoon olive oil1 small fresh hot chili pepperSalt and black pepper, to taste
1. In a large bowl, combine the red pepper, mango, onion, lime juice, cilantro, oil, chili, salt, and black pepper.
