Fruits and nuts in chocolate

Makes one 8-inch square

9 ounces 64 percent bittersweet chocolate, tempered (see below) 21 whole almonds, toasted 30 candied orange pieces 45 golden raisins, tossed in granulated sugar 1. Line an 8-inch square cake pan with foil. Ladle the chocolate into the pan. Immediately cover the tablet with almonds, candied orange, and raisins.

2. Refrigerate for 15 minutes. The tablet will start to release from the sides of the pan. Remove from the refrigerator and leave at room temperature for 15 minutes. Gently invert the pan over a clean surface. Tap lightly to release it.

3. For serving, break up the square.
