Spicy green beans

Serves 6

Salt and pepper, to taste 3 tablespoons olive oil 3 cloves garlic, chopped 2 teaspoons crushed red pepper 3 tablespoons unsalted butter 2 pounds green beans, trimmed 1. Bring a large pot of salted water to a boil.

2. In a small skillet heat the oil, garlic, and red pepper over low heat for 2 minutes, or until the garlic is brown. Add butter and cook until it melts; remove from heat.

3. Cook the beans in the boiling water for 2 minutes, or until bright green and tender. Drain and return to the pot. Toss with the oil mixture, salt, and pepper. Keri Fisher
