Marshmallow fluff

Makes about 2 cups

2/3 cup sugar 1/3 cup water 20 large marshmallows 3 egg whites 1 teaspoon vanilla extract 1. In a saucepan, combine the sugar and water over medium heat. When the sugar melts, bring the mixture to a boil. Turn the heat to low, add the marshmallows, and let them cook, stirring occasionally, until melted.

2. Meanwhile, beat the egg whites until they hold soft peaks. Beat the hot marshmallow mixture into the whites.

3. Let the mixture cool slightly. Stir in the vanilla. Adapted from Kilian Weigand
